Focaccia bread

On my recent trip to Italy our last leg of the journey was Florence. We we went to Panini Toscani one of the most popular panini places in Florence. The shop server explained all the different types of bread, meats and cheeses while letting us sample prior to making our orders.

This was a brilliant idea so we could not only get the story behind it but taste it as well. I instantly fell in love with the focaccia bread, it was soft but yet packed full with flavour. I opted to have that as my sandwich with filling of my choices. The focaccia teamed with melted mozzarella, pickles and salami was just so heavily. However on the trip I also fell in love with mortadella ham. It has always been a favourite of mine.

At home with my focaccia bread as my filling choices I put mortadella ham with cornichons, sliced tomatoes and mozzarella under the grill for a few minutes to let the cheese melt. Not only is it quick to do but it is so delicious it leaves you want to have another one and takes me back to my trip to Italy.

Ingredients

3-4 servings
  • For the garlic and olive oil mix:
  • 130 mlextra virgin olive oil (or a garlic infused oil)
  • 2-3 clovesgarlic, finely grated
  • 1 teaspoondried thyme
  • 1 teaspoondried rosemary
  • 1/2 teaspoonground black pepper
  • For the dough:
  • 235 mlwarm water (warm to the touch)
  • 2 1/2 teaspoonactive dry yeast
  • 1/4 teaspoonsugar or honey (acts as an agent for the yeast to feed on)
  • 315 gstrong bread flour
  • 1/2 teaspoonfine sea salt

Steps

    Finely grate the garlic and place into a medium pan along with the extra virgin olive oil, thyme, rosemary and black pepper. On very low heat cook the ingredients for about 5 minutes or until the aroma fills the room, stirring occasionally (to ensure that the garlic does not burn) and set aside letting the mixture cool down completely.

    In a measuring jug combine the warm water with the yeast and sugar (or honey). Stir to incorporate the mixture and let it sit for 5 minutes. The mixture should become frothy as the yeast activates.

    In a large mixing bowl or large mixing stand (if using a mixer) add 1 cup of the flour and 1/4 cup of the oil infused garlic along with the yeast, sugar and water mixture to the bowl. Stir with a fork a few times until all of the flour has mixed in. Let it sit for 5 minutes. Then add the remaining flour (1 1/2 cups) and the salt to the bowl. Stir the mixture with a fork (or utensil of preference).

    When the dough comes together transfer onto a floured surface and knead again until smooth. Alternatively, if using a stand mixer mix the mixture on setting 2 and when the dough forms increase the setting to 3 and knead until smooth. Transfer the dough to a large oiled bowl, cover with an oiled cling film and keep in warm place (for best results let the dough rise in warm area such as the oven).

    Let it prove for 1 hour. After the hour preheat oven to 220 degrees. Oil a 9-inch by 13-inch baking tray, using some of the remaining garlic olive oil mixture. Transfer the dough to the baking tray and using your fingers press the dough down into the tray (covering the whole tray). Use fingers to create the dimples into the dough. Drizzle top of the dough with the remaining garlic olive oil mixture. Let the dough rest and rise again for 20-25 minutes.

    Place the tray on the middle oven rack and bake the dough for 20 to 25 minutes until golden brown. Transfer the baked focaccia bread immediately onto a wire rack to cool down completely.

    Serve the bread with balsamic and extra virgin olive oil dip as a snack. Or turn it into a sandwich with any filling(s) preference.
