Prepare all the ingredients.

Wash and chop the tomatoes. Crack the eggs into a bowl. Wash and chop the green onions.

Beat the eggs. Heat a pan and add 1 teaspoon vegetable oil. Pour in the eggs and scramble until just half-cooked, then remove 2/3 of the eggs and set aside. (For creamier eggs, you can add 1 tablespoon milk and 1 teaspoon soy sauce to the eggs before cooking.)

Add a little more oil to the same pan. Add the chopped tomatoes and 1/3 of the scrambled eggs. Stir-fry briefly, then reduce to low heat, cover, and cook for 2-3 minutes.

After 2-3 minutes, uncover the pan. The tomatoes should be soft and juicy. Add the remaining 2/3 of the eggs and the ketchup. Cook for 1 minute to let the flavors blend.

Stir the tomatoes and eggs together until well mixed.

Add the seasonings and sprinkle with the reserved green onions. Serve immediately.
