Samosa Squares/ Mat Samosa

For dough, add salt, ajwain and ghee to the maida flour and mix well till it holds shape. Now add water and knead a semi stiff dough. Cover and keep the dough aside for 15 minutes.

For stuffing, boil raw banana and green peas and mash them. Further add salt, lemon juice, chopped coriander, ginger chilli paste.

For tempering, heat oil, add urad dal, turmeric powder, hing,cumin seeds and curry leaves. Pour the tempering to the banana mixture and mix all the ingredients well.

Now make medium sized balls from the dough and roll thin. Cut off the edges to make a square. Cut from the center and place 1 horizontal and 1 vertical.

Fill stuffing in the center and fold 2 sides as shown in the picture and seal both the sides by pressing. Cut thin stripes on the remaining 2 sides.

Fold the alternate stripes as shown to make the mat design. Press and seal the edges by applying water.

Similarly prepare other squares. Deep fry on low flame till it turns golden brown. Make sure to fry them on low flame to avoid forming bubbles on the layer.
