For tomatoes -
3-4 medium size tomatoes
3-4small onions sliced fine
as per tasteBlack pepper powder
as per tasteSalt
For anchovy vinaigrette-
3 Tbsp White wine vinegar
1canned anchovy fillets rinsed and drained
2 Tbspolive oil
1/2 tspdijon mustard
1-2garlic cloves
as requiredSmall handful of basil leaves

as per tasteSalt
For garnish -
as required small parsley leaves and basil leaves

Preparation time-10 mins, Cooking time-10 mins

To make the vinaigrette - in a blender add dijon mustard, garlic, vinegar, anchovies. Blend smooth. Add olive oil slowly and blend one more time. Add salt and black pepper and set aside

Cut the tomatoes into quarters or halves. Plate in a bowl, add chopped onions, add salt and pepper, add anchovy vinaigrette from the top

Garnish with basil and parsley and enjoy with bread
