Ingredients

  • For making potli
  • 9-10Laung (Cloves)
  • 1Darchini (Cinnamon stick)
  • 1Badi elaichi (Black cardamom)
  • 1/2 tspSabut kali mirch (Black pepper corns)
  • 1/2 tspSaunf (Fennel seeds)
  • 1/2 tbspDhania (Coriander seeds)
  • 1/2 tbspZeera (Cumin seeds)
  • 2Tez paat (Bay leaves)
  • For Yakhni (Stock)
  • 1/2 KgBeef boti (cut in small pieces)
  • 1.5 litersPani (Water)
  • 1 & ½ tspAdrak lehsan paste (Ginger garlic paste)
  • 1 mediumPyaz (Onion) sliced
  • 1/2 tbspNamak (Salt)
  • for pulao;
  • 1/4 CupOil
  • 1 mediumPyaz (Onion) sliced
  • 1 tbspAdrak lehsan paste (Ginger garlic paste)
  • 1/2 tspHaldee powder (Turmeric powder)
  • 1/2 tspDhania (Coriander seeds) roasted & crushed
  • 1/2 tspZeera (Cumin seeds) roasted & crushed
  • 1 tspLal mirch (Red chili) crushed
  • 1/2 tspKali mirch (Black pepper) crushed
  • 1 tspGaram masala powder
  • 1 tspNamak (Salt)
  • 1/2 CupDahi (Yogurt) whisk
  • 2Hari mirch (Green chilies)
  • 1/2 CupPodina (Mint leaves) chopped (Optional)
  • 3 CupsYakhni (Stock)
  • 1/2 kgChawal (Rice) sella (soaked for 30 minutes)

Steps

  1. 1

    For Potli:
    In muslin cloth,add cloves,cinnamon sticks,black cardamom,black pepper corns,fennel seeds,coriander seeds,cumin seeds,bay leaves and warp it to make a potli.

  2. 2

    For Yakhni (Stock):
    In cooker,add beef boti,water,ginger garlic paste,onion,salt,potli and bring it to boil,cover and cook until meat is done (approx.15-20 minutes).

    Remove potli and discard it.

  4. 4

    Remove meat,set aside and cook beef stock until it reduce to approx. 3 Cups.

  5. 5

    In pot,add oil and onion,fry until golden brown.

  6. 6

    Add ginger garlic paste and mix well.

  7. 7

    Add cooked meat,turmeric powder,coriander seeds,cumin seeds,red chili crushed,black pepper crushed, garam masala powder,salt and mix well.

  8. 8

    Add yogurt,mix well and cook on high flame until water is reduced and oil separates.

  9. 9

    Add green chilies,mint leaves and mix well.

  10. 10

    Add beef stock and mix,add rice and mix well.

  11. 11

    Cook on high flame until water is reduce to ½ cup,cover and steam cook for 8-10 minutes.

    Serve with raita and salad.
