Ingredients

  1. For making potli
  2. 9-10Laung (Cloves)
  3. 1Darchini (Cinnamon stick)
  4. 1Badi elaichi (Black cardamom)
  5. 1/2 tspSabut kali mirch (Black pepper corns)
  6. 1/2 tspSaunf (Fennel seeds)
  7. 1/2 tbspDhania (Coriander seeds)
  8. 1/2 tbspZeera (Cumin seeds)
  9. 2Tez paat (Bay leaves)
  10. For Yakhni (Stock)
  11. 1/2 KgBeef boti (cut in small pieces)
  12. 1.5 litersPani (Water)
  13. 1 & ½ tspAdrak lehsan paste (Ginger garlic paste)
  14. 1 mediumPyaz (Onion) sliced
  15. 1/2 tbspNamak (Salt)
  16. for pulao;
  17. 1/4 CupOil
  18. 1 mediumPyaz (Onion) sliced
  19. 1 tbspAdrak lehsan paste (Ginger garlic paste)
  20. 1/2 tspHaldee powder (Turmeric powder)
  21. 1/2 tspDhania (Coriander seeds) roasted & crushed
  22. 1/2 tspZeera (Cumin seeds) roasted & crushed
  23. 1 tspLal mirch (Red chili) crushed
  24. 1/2 tspKali mirch (Black pepper) crushed
  25. 1 tspGaram masala powder
  26. 1 tspNamak (Salt)
  27. 1/2 CupDahi (Yogurt) whisk
  28. 2Hari mirch (Green chilies)
  29. 1/2 CupPodina (Mint leaves) chopped (Optional)
  30. 3 CupsYakhni (Stock)
  31. 1/2 kgChawal (Rice) sella (soaked for 30 minutes)

Cooking Instructions

  1. 1

    For Potli:
    In muslin cloth,add cloves,cinnamon sticks,black cardamom,black pepper corns,fennel seeds,coriander seeds,cumin seeds,bay leaves and warp it to make a potli.

    For Yakhni (Stock):
    In cooker,add beef boti,water,ginger garlic paste,onion,salt,potli and bring it to boil,cover and cook until meat is done (approx.15-20 minutes).

    Remove potli and discard it.

    Remove meat,set aside and cook beef stock until it reduce to approx. 3 Cups.

    In pot,add oil and onion,fry until golden brown.

    Add ginger garlic paste and mix well.

  7. 7

    Add cooked meat,turmeric powder,coriander seeds,cumin seeds,red chili crushed,black pepper crushed, garam masala powder,salt and mix well.

    Add yogurt,mix well and cook on high flame until water is reduced and oil separates.

    Add green chilies,mint leaves and mix well.

    Add beef stock and mix,add rice and mix well.

    Cook on high flame until water is reduce to ½ cup,cover and steam cook for 8-10 minutes.

    Serve with raita and salad.
