Spinach with Mushrooms

Pick and wash the spinach thoroughly, then chop it.

Peel and finely dice the onion. Sauté the onion with the oil and butter in a deep pot until it softens, then add the mushrooms and spices, stirring well until the mushrooms are cooked.

Add the chopped spinach and salt, and stir everything well. Cover the pot slightly until the spinach wilts and the liquids reduce a bit.

Serve the spinach garnished with green onions and fresh lemon zest, and offer with fresh lemon juice to help absorb the iron from the spinach.
