Cooking Instructions
- 1
Mix the ingredients in a bowl.
- 2
Heat a small amount of vegetable oil in a pan. Add the meat and saute thoroughly, breaking it up into small pieces as you cook.
- 3
Add the mixed ingredients from step 1 to the pan. Fry over medium heat until the liquid is absorbed and evaporated.
- 4
When the liquid is gone, transfer to the the right hand side of a large plate.
- 5
Place a folded towel under the right side of the plate (the meat side). This will tilt the plate to allow the fat to drain.
- 6
Wait a while until the excess fat drains down to the empty side of the plate. Wipe it off with paper towels and it's done.
- 7
Divide the soboro into small portions and wrap in plastic wrap.
- 8
Place the wrapped portions in a ziplock bag for storage. When you want to use the soboro, remove the desired portion from the ziplock and microwave to use.

I made this for my elderly mother, who doesn't like meat.Be sure to cook it patiently to evaporate the moisture. This is especially important at the beginning. If the heat is too strong the tofu will splatter, so pay attention! If you let too much moisture evaporate though, the crumbles will become dry and mealy. If you turn the heat off too early, it will be soggy. Just stop cooking when it reaches the crumbly soboro stage. The heat level and judging when to stop cooking are very important! When I used a food processor to mince tuna trimmings, it was easy to separate the sinews from the meat. I used the minced trimmings to make soboro rice bowl and my children loved it. Since then, this has been a family favorite.Tuna trimmings tend to be dry without any fat, so I made it moist with some mayonnaise. If not serving this immediately, omit the mayonnaise and squirt it on before serving. Adding 1 teaspoon of miso to the mayonnaise also gives it flavour. Recipe by miyuki12 cookpad.japan
