Wash and soak dal for 4 hours.

Drain excess water and make thick paste.

Beat the batter with hands for 7-8 minutes to make it fluffy.(drop a little batter into water, if it floats means batter perfectly beaten)this way there is no requirement of soda to make Vada soft.

Prepare water for poaching vada- in a bowl mix 2 cup water +1 cup buttermilk+ salt + 1/4 tsp hing + 1/2 tsp crushed and roasted cumin seeds- poaching Vada into buttermilk will enhance the taste.

Into a batter, add salt, crushed black pepper, 1/2 tsp hing and mix it well.

Drop small dumplings into hot oil and fry them till nice brown colour.

Now directly add this Vada into buttermilk and let them poach for 2-3 hours and same way prepare from remaining batter.

For Dahi vada masala- make fine powder of 1 tbsp roasted cumin +1 tsp crushed black pepper + 1 tbsp black salt+ salt as needed + 1/2 tsp red chilli powder

Assemble vada- take vada from the buttermilk, remove little water, no need to remove all the water,put them into plate, pour beaten curd, green chutney, tamarind chutney, dahi vada masala and red chilli powder.
