Matcha Green Tea Shaved Ice with Cute Mochi Balls

It's boiling hot outside! So I created a chilled dessert that'll cool me from within.
If you mix the dry ingredients all together, the mochi balls will become stiff, so add water to adjust the texture. If you plan to shape the mochi balls into characters, it's best if the dough is slightly on the softer side. Shape the dough on a sheet of parchment paper, then drop it into a pot of boiling water. Steps
- 1
Prepare the matcha shaved ice. Combine the sifted matcha with the sugar.
- 2
Add the hot water to dissolve.
- 3
In a separate bowl, add the rest of the sugar to the water, and heat. Once it comes to a boil, remove from heat, and chill. This is the simple syrup.
- 4
Gradually add Step 3 into 2 to dilute. Stir well, pour into a tray, and freeze.
- 5
Once it is half-frozen, stir it up with a fork to flake, and return back into the freezer. Repeat this several times for the shaved ice.
- 6
Make the raccoon mochi balls. Combine the shiratamako with water, and knead well to form the mochi dough. Separate two portions out and sprinkle with cocoa powder and another left plain.
- 7
Add the hojicha powder to the remaining dough and divide into 18 portions.
- 8
Take a small portion of the hojicha dough for the ears, and roll the rest into flattened circles. Roll tiny balls and stick on the top of the head to form ears.
- 9
Use the cocoa and plain dough to form the eyes.
- 10
Stick on the nose.
- 11
Drop the formed mochi balls into a pot of boiling water. Once they've risen to the surface, cook for another 2 minutes.
- 12
Transfer to a bowl of cold water.
- 13
In the plastic cups, add a layer of corn flakes.
- 14
Boiled adzuki beans.
- 15
Then the matcha shaved icea.
- 16
Lay the raccoon mochi balls on top.
- 17
Consume before the shaved ice melts.
