Thai-Style Chilled Beef Pasta

I went to a Thai restaurant the other day and ordered a yum neua salad. It was so good that I decided to try and make it into a pasta dish.
Feel free to use whatever cut of beef you like. For the dish in the photo I used up some spare beef steak fillets that I had. If you use store-bought beef tataki, it will give the salad a delicious flavour and cut the preparation time slightly.
When making the sauce, the flavour will be a little more acidic if you use kabosu juice rather than lemon juice. Recipe by Estoyllena

Cooking Instructions
- 1
Sprinkle some salt and pepper over the beef. Stir-fry the beef in a hot frying pan greased with vegetable oil until both sides are brown. The beef will taste better if it is still a little pink in the middle so it's best not to overcook it. Once cooked, cut the meat into thin slices.
- 2
Finely chop the tomato and thinly slice the onion. If the taste of the onion is a bit harsh then try soaking it in some water.
- 3
Add 1 tablespoon of oil to a hot saucepan. Then add the chopped garlic, green chilli pepper, coriander, sugar, water, oyster sauce, fish sauce and lemon juice and mix everything together. The sauce will be ready after 2-3 minutes. If the flavour is too strong for you then feel free to adjust the concentration with some water.
- 4
Boil the capellini for 1 minute longer than instructed to on the packet then rinse in cold water. Thoroughly pat the pasta dry with kitchen paper.
- 5
Mix together the pasta and the sauce, then mix in the chopped tomatoes and sliced onion. Serve the sliced beef on top and it's ready.

Please note that cooking in a small pot may result in the pot boiling over, or the pasta may not come out right! Remove the skin off the tomatoes for a smoother texture. Salad-Style Chilled Peach Pasta Salad-Style Chilled Peach Pasta
This recipe was based on a dish that was taught to me by a chef in a wine restaurant in Tokyo. I made it a few times to make my own variation.-The warmth of your hands helps to blend the dressing into the spaghetti.-Adjust the amount of ponzu for the dressing to taste depending on your preference of sourness.-You can also use balsamic vinegar instead of the apple cider vinegar. I really wanted to make apple and honey curry but all I had on hand was daikon radish. But using the daikon radish went surprisingly well!!The curry I used was Kokumaru brand medium-spicy type. The flavor of this dish will probably change slightly based on the type of curry you use. But anyway, medium-spicy has just the right amount of sweetness. Recipe by Shimaki cookpad.japan -

Chilled Pasta with Avocado and Basil Sauce Chilled Pasta with Avocado and Basil Sauce
I love pasta with avocado and basil sauce, but over the years, since the flavor has gotten a bit overpowering, I've been adding lemon juice; But adding ponzu brought the flavors together and it was tasty The tartness of the tomatoes is also a perfect match. I use my own recipe for the basil sauce.Adjust the amount of basil sauce to taste. Since the flavor of store-bought basil sauce varies, you may need to add more flavor with grated cheese and a pinch of consommé stock granules. It's also tasty if you chop up a small pat of cream cheese and mix it into the pasta. Recipe by putimiko cookpad.japan -

Chilled Pasta with Shrimp and Avocado Chilled Pasta with Shrimp and Avocado
I made this chilled pasta because I had an extra avocado on hand. I used Cappellini, which cooks quickly. The sauce does not have the distinct smell of soy milk, so it should be fine for those who dislike soy milk.Adjust the flavor with salt if needed. The wasabi adds an accent to the dish, but it's fine to omit it. Recipe by Uiui cookpad.japan
