This is one of the most simplest of Rice variations that's popular down South. Sambar is a great side dish that is a treasure house of numerous Vegetables and Lentils that are full of Vitamins and Minerals. A healthy option for the whole family.
This is the most loved one in my family and it is part of a once a week menu without fail.
What more to say about this beautiful fusion of Rice and Vegetables plus Lentils broth. Absolutely delectable and yum. It goes well with many a South Indian Breakfast recipes like Dosas, Medu Vadas, Uttappams , Idli and Upma.
Not only that, it has a charm of it's own and can be made at main meals to go along with Hyderabadi Tala huwa Gosht just like how I do.

Steps

Prepare Rice as per your requirement and keep aside. Meanwhile dry roast all the ingredients mentioned under Sambar powder and grind to a powder. Set aside.

Pressure cook Daal and Vegetables with some Ginger Turmeric, Sambar, Red Chilli powders and Salt. Set aside. In a large pot, heat Ghee and prepare the tempering.

To this prepared tempering, add in the cooked Rice and the Vegetables along with Daal. Add some Tamarind water as well and adjust Salt according to one's own taste. Cook on a low heat for about 10-12 minutes or so. That's it. All done and absolutely ready. Dish it out piping hot with Poppadums or Papad alongside. Enjoy! Yum!
