Ingredients

20-25 mins

  1. 12Pork Sausages
  2. 25 mlLard or Iberico Fat
  3. Onion Gravy
  4. 2onions, peeled and sliced
  5. 1 tbspLard
  6. 25 mlMadeira or Sherry
  7. Salt and Pepper
  8. 200 mlChicken Stock
  9. 200 mlVeal Stock (Beef Stock)
  10. 1 tspBovril
  11. 1 tspMarmite/yeast extract
  12. Knobbutter
  13. The Mash
  14. 1 kgMaris Piper Potatoes, baked and put through a ricer
  15. 100 gButter
  16. 100 mldouble cream
  17. Salt and White Pepper

Cooking Instructions

20-25 mins

    Pop the onions into a pan with lard/fat and cook until deeply coloured. Add the madeira stock, marmite and Bovril. Bring to the boil then simmer for 5 minutes, season, then finish with butter.

    Pan fry the sausages until deeply coloured.

    Melt the butter in a saucepan for the mash, add the mash and cream and mix thoroughly, serve a big spoonful with the sausages and onions and gravy.
