Beef Phở Rolls
This dish is quick and refreshing—perfect for hot weather!
Steps
- 1
Slice the beef thinly and marinate with a little oyster sauce and crushed ginger. Let it sit for 15 minutes to absorb the flavors.
- 2
While the beef is marinating, pick and wash the fresh herbs, lettuce, and mustard greens. Mustard greens pair especially well with beef! Soak the greens in water mixed with baking soda or a little salt for 10 minutes.
- 3
Sauté crushed garlic in a pan until fragrant, then add the beef and stir-fry over high heat until just cooked through.
- 4
Lay out the phở rice paper sheets, place the greens and beef on top, and roll them up tightly.
- 5
Make the dipping sauce: Mix water, sugar, vinegar, fish sauce, and chili sauce in the following ratio: 4 : 2 : 1 : 1 : 1/2. Stir until dissolved and your dipping sauce for the phở rolls is ready!
