Oven cooked Irish stew and dumplings

Hearty stew with homemade dumplings, confort food at its best. Great for those cold nights. Irish stew is made with lamb mince. There are of course, family variations. In Italy I can't get suet, so I made my dumplings with butter, just as nice! #stew #irish #comfortfood

Cooking Instructions

Preheat oven to 160 degrees Celsius. Chop the leek and put in a casserole dish. Add the hot stock and bay leaves. Cover and pop in the oven for about 40 minutes. Meanwhile, brown off the mince without oil. Drain any fat and set a side

Peel and chop potatoes and carrots into good sized chunks. Add to the casserole dish along with the mince. Season to taste. Cover and pop back in the oven again for about another hour.

Meanwhile make your dumplings. Put flour in a bowl. Add butter and rub between your fingers until you get fine breadcrumbs. Then using a teaspoon, add water a little at a time, mixing until you get a sticky dough. Don't use your hands, use two spoons to form balls and add to the stew.

Cover and pop back in the oven for final time for about 40 minutes. Enjoy 😊

I love traditional Japanese sweets but I don't like that anko is always so sweet.I wanted to make not-so-sweet daifuku dumplings, so I referred to recipes in magazines, and adapted them to use ingredients I had on hand.The mochi dough will be very hot, so be careful with it. It won't harden when it cools, but it will be harder to wrap around the bean paste, so I think it's better to work quickly with it.It's much easier to wrap the dumplings if you don't put in too much bean paste!Put as many black beans as you like, but I used about 8 per dumpling.I recommend using small beans.If the dough sticks, be brave and use a ton of katakuriko.
