Lauki Modaks is Simple, easy to make and delicious Modaks. This recipe is made by using bottle gourd, milk, sugar and dessicated coconut. For the flavoring, cardamom powder and rose water is added.

Lauki Modaks is Simple, easy to make and delicious Modaks. This recipe is made by using bottle gourd, milk, sugar and dessicated coconut. For the flavoring, cardamom powder and rose water is added.
Steps

👉Peel wash and grate bottle gourd. Discard its inner white. Grate only the outer green layer of the bottle gourd. Squeeze its extra water by tying it in a muslin cloth.

👉Heat 1 tbsp ghee in a heavy-bottomed karahi. Add the grated bottle gourd and saute for 2-3 minutes or till its water gets evaporated. Now add 1 cup milk and mix. Cover the lid and cook till the milk gets absorbed by the bottle gourd.

👉Add sugar and stir well. Cook on low flame till sugar dissolves and completely dry till bu bubbles come.

👉 add desiccated coconut and mix. Saute for 2-3 minutes. ADD remaining ghee and mix.

👉Add milk powder in batches to avoid the formation of lumps and mix while stirring. Add half of the chopped pistachio, green cardamom powder, and rose water. Keep on stirring continuously till it turns into a lumpy mixture. Switch off the flame and transfer it to a greased plate. Let it cool for 10 minutes.

Now grease the modak mould. Fill it with the prepared mixture and close it. Remove excess mixture from mould. Presd it. Now demould modaks carefully. Remove it to a plate. Likewise, make all the modaks. I have prepared 6 modaks with this mixture.

Serve modaks to Bappa.
