Pat dry roast, rub kosher salt and pepper. let's sit and marinate in fridge for 30 min. Preheat oven 275.

Use oil sear all sides of roast in cast iron Dutch oven
- 3
Set aside roast don't wash pan and pour in apple cider and chicken broth, all herbs, garlic, onion and simmer until onion is clear

Put the roast back in the mixture, close lid tightly, put in preheated 275 degree oven center rack. Bake about 4.5 hour to 5. Keep lid close! Internal temp to 205 degree

Take the pot out and scoop the goodness onto the roast. Let it rest for 10 - 15 min

Take out just the roast into a bowl toss the fat and bone. Shred with 2 fork

Strain the semi cool onion mixture, mix in the 2 tbp of corn starch slowly with a whisk. Heat with medium heat and keep whisking for about 10 min. Cool for it to thicken
