Firstly, take ghee in a big bowl, ghee should be thick. Add powdered sugar to it and and mix slowly.

You can use a whisk to whisk/mix the ghee and sugar. Beat it until it becomes creamy and slightly white.

Now put a sieve over it and add all-purpose flour, gram flour, rava, baking powder, cardamom powder and salt.

Now mash it and mix it well. sieve the flour so that everything gets mixed well. If the flour is dry, then add milk to it and mix well.

Now prepare dough of this mixture.

To make cookies in a pressure cooker, add 1,1/2 cup salt and place a bowl or cooker rack in it. Place a plate on the top of it as well.

Now remove the gasket or whistle from the cooker and close it. Heat it for 5-10 minutes, this will preheat it.

Now take a ball sized dough and roll it, make a mark between it.

Now place these cookies dough on the plate and keep a distance between them.

Now place chopped pistachios or cashew nuts on them.

Now cover it and cook on medium heat for 15 minutes. You can also preheat the oven and bake it at 180 degree celsius for 15 minutes.

The cookies will be soft in beginning. Let it cool completely and the nankhatai cookie will be crispy and crunchy.

Finally, once the nankhatai is ready, store it in a air tight container and enjoy it for a week.
