  1. 3 TablespoonsButter
  2. 4 Tablespoonsminced Garlic
  3. 1 bagSpinach
  4. Salt And Pepper, to taste
  5. 2 cansArtichoke Hearts, Rinse and Drain
  6. 3 TablespoonsButter (additional)
  7. 3 TablespoonsFlour
  8. 1-1/2 cupHeavy Cream (more If Needed)
  9. 1 package (8 Ounce)Cream Cheese - Softened
  10. 1/2 cupCrumbled Feta
  11. 1/2 cupGrated Parmesan
  12. 3/4 cupsGrated Pepper Jack Cheese
  13. 1/4 teaspoonCayenne Pepper
  14. Extra Grated Pepper Jack for top

Cooking Instructions

    Melt 3 tablespoons butter in a skillet over medium heat. Add the minced garlic and cook for a couple of 3 minutes. Increase heat and add the spinach. Stir and cook for a few minutes until the
    spinach wilts. Remove the spinach and place it in a small
    strainer.

    Add artichokes to the pan and cook over medium high heat for several
    minutes, until liquid is cooked off and artichokes start to get a little colour.
    Remove the artichokes and place into strainer.

    In the same skillet or a different pot, melt 3 additional tablespoons of
    butter and whisk in 3 tablespoons of flour until it makes a paste. Cook
    over medium-low heat for a minute or two, then pour in Heavy Cream. Stir and cook until slightly thickened; add more Heavy Cream if needed.

    Add cream cheese, feta, Parmesan, pepper jack, and cayenne pepper and stir until all the cheeses are melted and sauce is smooth. Chop artichokes and spinach and add to the sauce. Stir to combine.

    Pour all ingredients into buttered baking dish. Then top with the extra grated pepper jack and bake at 375 for 15 minutes, or until cheese is melted and bubbly.

    Serve with toasted pita wedges, chips, or crackers!
