Ingredients

Prep 30 to 45 min Cook 60 to 90 min
8 to 12 servings
  • Pie Crust* for 4.5 -5 quart ovenware
  • 2 1/2 cup (250 g)Rolled (Old-fashions) oats or Quick-cooking oats
  • 1/2 cup (120 g)Unsalted margarine -Room temperature
  • 1/3 cup (90 ml)Cold water
  • 2 tsp (10 ml)White vinegar
  • *Feel free to use alternatives such as your favourite bread heel and ready-to use pie/tart shells, etc, even no crust!
  • Pie Filling
  • 1Medium Onion
  • 1Medium Carrots
  • 1/3 cupNo salt added Corn -Drained
  • 1/3 cupGreen beans or 1 cup Green peas -Frozen
  • 1 can (284 ml)No salt added Sliced Mushrooms or 8 oz (240g) Fresh mushrooms
  • 1 can (540 ml)Red kidney beans
  • 1 can (398 ml)No salt added Tomato sauce
  • 3 tbsp (45 ml)Red wine
  • 2 tsp (10 ml)Worcestershire Sauce
  • 1 tspGround black pepper
  • 1 tspGarlic powder or Granulated garlic
  • 1 tspItalian herb mix (dry)
  • 3 tbspRolled (Old-fashioned) or Quick-cooking Oats
  • 1 cup (120 g)Less sodium Cheese -Shredded

Steps

Prep 30 to 45 min Cook 60 to 90 min

    Make pie crust (see instructions at Recipe # 16666360 --Easy Homemade Oat Flour Pie Crust--)

  2. 2

    Fill the pie crust from step 1 (or tear up bread heel, ready-to-use pie/tart shells, etc at your choice)

    Drain and rinse canned Kidney beans.

    Put Kidney beans, Tomato sauce, Red wine, Worcestershire Sauce, Black pepper, Garlic powder, Italian herb mix, Oats into the blender.

    Puree them on low speed for about 1 minute or until smooth. Set-aside.

    Cut or measure vegetables.

    Chop vegetables.

    Heat a large fry pan or pot to Med-High temperature and add Olive oil. Fry Onion and Mushrooms until onion becomes slightly transparent.

    Add Potatoes and vegetables from Step 6. Continue to fry about 5 min.

    Pour the mixture in the fry pan from Step 5. Combine thoroughly.

    Reduce the heat to medium-low and simmer 10-15 min, or until the mixture becomes thick and turns red as if it were a tomato sauce.

    While simmering, Place a rack in middle of oven, and preheat oven to 350 ℉ (180 ℃).

    Pour the mixture over the pie crust Step 1, and sprinkle cheese on top.

    Bake 45-60 min at 350 ℉ (180 ℃). Adjust bake time based on your oven.

    You can see bubbling filling.

    Serve with your favourite salad. Enjoy!
