Barnyard Millet and Lemon Upma

Millets are wonderful and superfoods. They are our ancient grains which are so gut friendly and nutritious foods which can be eaten by all. Barnyard millet is rich in calcium, protein, iron, fibre, potassium, zinc and vitamin B complex. I have given a lemony flavour by adding lemons from my mom's garden❤️ enjoy!

First, roast the barnyard Millet for 5 minutes. Then pour 1 cup of boiling water and keep covered for 10 minutes. It will become soft.

Then heat ghee. Add the seeds, Daals, chillies, curry leaves, hing one by one. Saute on medium heat till aromatic. Do not let it burn.

Then add cashews, ginger, onions, carrots, peas and saute till translucent and aromatic. Then add tomatoes, salt, Chilli powder and cook till soft by adding 2 tablespoons of water.

Now add boiling water and let it get a rolling boil. Then add the roasted semolina and soaked barnyard millet. Keep mixing with a perforated spoon so that there are no lumps. Keep stirring and adding the semolina.

Once all is mixed, check water quantity, add 1 cup more boiling water. Add salt, sugar, chilli powder and Cumin powder. Cover and cook till water is absorbed and millet is cooked. Check the softness by pressing with fingers. If millet needs more cooking, cover and cook. Lastly mix in 1 tsp ghee for added taste.

Switch off flame. Mix in lemon juice. Stir all well. Serve hot with more lemon wedges, sev, coriander leaves on top. Enjoy with coconut chutney, curd, pickle.
