Presenting Shahi Moong Dal which is a preparation out of rich ingredients like Cashews, Raisins, Paneer, whole Garam Masala and Ghee.
Steps

Cut paneer in small pieces, assemble all other ingredients.

Pressure cook Daal for 2-3 whistles and keep aside.

Also steam carrot, bottle gourd separately and mix with boiled Dal.

Roast cashews, raisins till golden brown and keep aside.
Fry Paneer till golden brown and keep aside. - 5
Now in pan add oil, add cumin seeds + red chilli + bay leaf + ginger paste and sauté for 1 minute and allow to crackle, then add boiled Daal along with water, add green chilli + salt + turmeric and give a 4-5 times rolling boil.
Now add paneer + cashews + raisins and give 2-3 minutes boil. Add water as per desired consistency.
This is a thick consistency Dal. - 6
Add ghee + sugar and simmer for 2 - 3 minutes, Shahi Daal is ready.

Served with hot steamed Rice / Vegetable Pulao / Phulka/ Paratha.
