This is my take on pasta with Calabrian onions.
Steps

Slice the onions lengthwise so they separate into layers during cooking.

Sauté the onions until just golden. Do not add salt. Meanwhile, dissolve the Nduja in a little hot water in a separate bowl.

Add the Nduja and 3/4 cup water (200 ml) to the onions. Cook until the onions are soft and the water has evaporated. Add 1 2/3 cups water (400 ml), bring to a boil, then add the spaghetti. When the spaghetti is cooked, stir in the grated cheese.

Sprinkle with ground chili pepper.
