Spicy chickpea and sweetcorn burgers

Steps
- 1
In a large bowl add the chickpeas, sweetcorn, chilli and garlic. Using a potato masher, mash until the chickpeas are almost completely mushed, the sweetcorn will stay mostly intact.
You can use a food processor for this but be careful not to over blitz it, these need texture or they'll fall apart.
- 2
Add the flour and the spices. Mash them into the chickpeas and corn. Then using your hands bring the mixture together.
- 3
Lightly flour a large plate/baking tray. Divide the mixture into 4. Then using your hands shape the mixture into 4 separate patties. Thickness and size is up to you.
- 4
Put the patties into the fridge for 30 minutes to firm up. If you don't do this they'll break apart when you cook them.
- 5
Cook the patties until golden. I cooked mine on a Ninja Woodfire. But you can grill them, airfry them, barbeque them or pan fry them. They took about 20 minutes for me, but keep an eye on them.
- 6
I then added some cheddar cheese to the top and melted it, but that's optional. Serve them however you like. I had mine in buns with lettuce and tomatoes.
