Bring a large pot of salted water to a boil for the trofie pasta.

Wash and trim the cherry tomatoes, cut them in half, and set aside.

Wash and trim the eggplants, cut them in half, then dice them, and set aside.

Place the swordfish slices on a cutting board, dice them, and set aside.

In a skillet, heat olive oil and finely chopped garlic. Sauté until fragrant, then add the diced swordfish. Season with salt, black pepper, and finely chopped parsley. Cook for about 10 minutes.

Pour in the white wine and let it evaporate. Add the cherry tomatoes, season with salt and black pepper, and cook for about 10 more minutes.

Meanwhile, in another skillet, heat olive oil and finely chopped onion. Sauté until softened, then add the diced eggplant. Season with salt and black pepper, and cook for about 10 minutes.

After this time, add the cooked eggplant to the skillet with the swordfish and tomatoes. Season with salt and black pepper, and mix everything together for a few minutes.

Drain the trofie pasta while still al dente and add it to the skillet with the sauce. Add a little pasta cooking water and toss to combine.
