  • 3/4 cupred jasmine rice (about 135 grams)
  • 1 1/2 cupswater (about 355 ml)
  • 1 1/2 tablespoonsvegetable oil (about 22 ml)
  • 1/4 cuponion, finely diced (about 40 grams)
  • 1/2 cupcelery, diced small (about 60 grams)
  • 1/3 cupcarrot, diced small (about 40 grams)
  • 1/3 cupyellow bell pepper, diced small (about 40 grams)
  • 1/3 cupgreen bell pepper, diced small (about 40 grams)
  • 1green onion, thinly sliced

Steps

    Rinse the rice and place it in a pot with the water. Bring to a boil, then reduce the heat and simmer until the rice has absorbed the liquid and is tender, about 35 minutes, or follow the instructions on your rice package.

    Heat a skillet with the oil over medium heat and sauté the onion and garlic for a few seconds, just until fragrant but not browned.

    Add and sauté the remaining vegetables. Stir in the cooked rice and green onion. Mix well and serve.
