Rinse the rice and place it in a pot with the water. Bring to a boil, then reduce the heat and simmer until the rice has absorbed the liquid and is tender, about 35 minutes, or follow the instructions on your rice package.

Heat a skillet with the oil over medium heat and sauté the onion and garlic for a few seconds, just until fragrant but not browned.

Add and sauté the remaining vegetables. Stir in the cooked rice and green onion. Mix well and serve.
