Toast the guajillo chiles (do not let them turn black), onion, and garlic. Blend with a little vinegar and annatto, then strain over the pre-washed wings to marinate for 40 minutes.

Plum Sauce: Boil the tropical plums with jalapeños to taste, garlic, and onion (I used 1/2 lb plums, 1/2 small onion, one large garlic clove, and two medium jalapeños). Remove the pits from the plums and leave them in the pot to boil. Blend the pulp and other ingredients, then boil again with the pits and use as a dip.
