Cooking Instructions

Heat the vinegar gently in a large pan while stirring in the sugar.
Once the sugar has all dissolved add in the remaining ingredients. Bring slowly to the boil. - 2
Simmer for at least 2 hours to thicken and darken the chutney.
Allow the chutney to cool slightly before spooning into clean, sterile jars. - 3
#Tips:
The quantities in this recipe makes about 8 lb of chutney.
By dissolving the sugar in the vinegar to begin with you avoid the possibility of burning the sugar on the bottom of the pan. When the chutney is simmering make sure you stir the pan from time to time.

You can eat the chutney straight away but the flavours mature if left for about 3 months before eating.
