Ingredients

Serves 4 servings
  • 4 bowlscooked rice
  • 1little ground sesame seeds
  • as neededSliced nori (dried seaweed),
  • Cutlet
  • as neededAll-purpose flour,
  • 1.1–1.3 lbs pork loin or tenderloin (500–600 grams)
  • Salt and pepper, a little
  • 1egg
  • as neededPanko breadcrumbs,
  • 3 1/2 tablespoonsmilk (50 ml)
  • Sauce for Katsu-don
  • 5 tablespoonsmirin (75 ml)
  • 1 2/3 tablespoonssake (25 ml)
  • 1 1/4 cupswater (300 ml)
  • 7 tablespoonssoy sauce (100 ml)
  • 1/2 teaspoondashi powder
  • 1 tablespoongranulated sugar or raw sugar

Steps

  1. 1

    Make the sauce. Add mirin and sake to a pot and heat to evaporate the alcohol. Add the remaining ingredients and simmer over low heat until reduced to about two-thirds.

    Make the cutlets. For sauce katsu-don, thinner cutlets work best, so pound the pork to about 1/8 inch (2–3 mm) thick and season both sides with salt and pepper.

    Beat the egg well and mix in the milk. Dredge the pork in flour, dip in the egg mixture, then coat with panko breadcrumbs.

    Fry in oil heated to 340–355°F (170–180°C). Do not touch for the first 45 seconds. After 45 seconds, flip and fry the other side for another 45 seconds.

    After frying both sides for 45 seconds each, drain the oil well by standing the cutlets on a rack or tray.

    Dip the cutlets in the sauce, then place them on top of the rice bowls. For extra flavor, you can layer cutlets inside the rice for a two-layered bowl.
