Steps

Remove both ends and chop gawar into bunches. Instead of cutting gawar with a knife, if you have time, you can break it by hand.

Wash chopped cluster beans in water 2-3 times. Cut the potato and onion.

Heat oil in a pan. Add chopped onion and saute until onion becomes translucent. Then add ginger-garlic paste and saute for few seconds.

Add turmeric, koli masala, red chillies powder, hing, garam masala, hing, coriander powder and saute for 2 minutes.

Add chopped gawar, potato and saute for 2-3 minutes. Add little water (1-2 tbsp).

Cover the pan with lid and cook the gavar and potato for 10-12 minutes on low flame.
If the water dries up and gawar is not cooked yet, you can add little more water. - 7
When gawar and potato are cooked. Then add salt and 2-3 kokum rind. Mix well and cook for another 5 minutes.

Serve hot gawar bhaji with roti, dal and rice.
