Ingredients

20-25 minutes
3/4 servings
  • 250 gmsCluster beans / Gawar/Guar
  • 1Onion chopped
  • 1Potato (peeled and chopped)
  • 1.5 tablespoonsOil
  • 1 tspGinger-Garlic Paste
  • 1 pinchAsafoetida /Hing
  • 1/4 teaspoonTurmeric Powder
  • 1/2 teaspoonRed Chilli Powder
  • 1/2 teaspoonAgri/Koli masala
  • 1/4 teaspoonGaram Masala Powder
  • 1/2 teaspoonCoriander Powder
  • As neededSalt to taste
  • 1-2 tbspwater or as needed
  • 2-3Kokum rinds

Steps

20-25 minutes
  1. 1

    Remove both ends and chop gawar into bunches. Instead of cutting gawar with a knife, if you have time, you can break it by hand.

  2. 2

    Wash chopped cluster beans in water 2-3 times. Cut the potato and onion.

    Heat oil in a pan. Add chopped onion and saute until onion becomes translucent. Then add ginger-garlic paste and saute for few seconds.

    Add turmeric, koli masala, red chillies powder, hing, garam masala, hing, coriander powder and saute for 2 minutes.

    Add chopped gawar, potato and saute for 2-3 minutes. Add little water (1-2 tbsp).

    Cover the pan with lid and cook the gavar and potato for 10-12 minutes on low flame.
    If the water dries up and gawar is not cooked yet, you can add little more water.

    When gawar and potato are cooked. Then add salt and 2-3 kokum rind. Mix well and cook for another 5 minutes.

  8. 8

    Serve hot gawar bhaji with roti, dal and rice.
