not perfect.
1. ribs were salty (too much salt in dry rub)
2. ribs were dry (cover the top with foil, spritz it/ put a water pan)
3. fats were not rendered (read that fats render at 125F and takes 3-4 hours. optimal bbq temperature at 250F)

Dry season room temperature/ padded dry ribs

Oven 275F for 1 hr
- 3
Wet BBQ rub
- 4
Oven 350 for 1/2hr
