Almost Cioppino (Seafood Stew)

I was craving Cioppino but being in a land-locked state fresh, good seafood for making true Cioppino is extremely hard to come by. Enter my attempt to make it from some leftover trimmed down cod pieces from the last time I cut cod fillets and some freezer section and canned seafood. It still turned out really good, and my son and husband had two bowls each! Not the greatest pic cause I forgot to take one before it was half gone haha. Amount of people this serves really depends on how much everyone eats.

Steps

30 mins
  1. 1

Melt butter in a large pot of medium heat. Add onions and sauteed until tender, stirring often, about 5 minutes. Add garlic and sauteed 1 minute more.

  2. 2

Add vegetable stock, all clam juice (including reserved juice from can of clams), tomatoes, amd tomato sauce, salt, pepper, and red pepper flakes. I also add 1/4 tsp baking soda at this point to neutralize the acidity of the tomatoes. Careful, it will foam which is a natural reaction. Bring to a boil, reduce heat to medium low, cover and simmer for 15 minutes.

  3. 3

At 15 minutes add cod pieces. Simmer 5 minutes. You may need to increase the heat again to come back to a simmer quickly.

  4. 4

After 5 minutes add entire bag of seafood mix. Simmer 5 minutes more. Remove from heat and stir in baby clams to heat through. Taste for seasoning and adjust as needed.

  5. 5

This is the seafood mix I used. Some of the squid rings were rather large so I cut them in half.

Cooking is a hobby and a passion of mine. I love cooking and trying new and different things. The best thing about cooking? I get to prepare delicious food for my family and friends that they (almost) always love! Lol.Many of my recipes are experiments in what I could make with what was available at the time. Many are simply my version of classic and/or popular dishes. A few are variations of recipes I have found elsewhere online but adjusted to our tastes. No matter what, though, each of my recipes is tried and tested before posting and I hope you find as much joy in preparing them as I do.
