Creamy Semi Dried Tomato & Potato Soup (No Dairy)

I had some left over Semi Dried Tomatoes. Today I used them to make this Creamy Soup that I have been craving for a few days. It is silky smooth and very creamy, but you don’t need Flour OR any Dairy. The soup is creamy because of Potato. Absolutely simple and easy to cook. Enjoy with crusty bread.
Creamy Semi Dried Tomato & Potato Soup (No Dairy)

Cook Onion and Garlic with Olive Oil in a saucepan over medium heat until slightly caramelised. Add Semi Dried Tomato and stir. *Note: If Semi Dried Tomatoes are covered with Herbs, DO NOT remove the Herbs. Add the Herbs as well.

Add Chicken Stock and Potato, bring to the boil, then simmer until Potato is absolutely soft. Remove from heat, and use stick blender to process the soup until smooth.

Season with Salt and Black Pepper. Add some finely chopped Parsley (OR Herb of your choice) and enjoy with crusty bread.
