Steps

Boil or microwave potatoes until fork tender

Preheat oven to 425

Oil pie pan and smash potatoes until desired crust thickness, generously salt the crust and bake for 15 min

Cook bacon to crispy and crumble

Defrost veggies or prepare as needed

Blend eggs, cottage cheese, honey mustard, salt and pepper

Take crust out and add cheese and crumbled bacon
- 8
Add veggies and pour egg mixture into the crust. Add the rest of the cheese and top with bacon

Bake for 15-18 minutes or until eggs are no longer runny
