With half a rectangular sheet of puff pastry, I made two individual pastries. You can adjust the size to your preference and the occasion.

Roast the red bell pepper and eggplant in the oven until they are soft. Let them cool covered, so you can peel them easily. It's best to prepare them the day before.

Cut the puff pastry into two squares. Prick the surface all over with a fork. Place them on a baking sheet lined with parchment paper, cover with another sheet of parchment, and set another baking sheet on top to prevent them from puffing up. Bake at 400°F (200°C) for about 15 minutes, checking occasionally. Remove when lightly golden.

Peel the red bell pepper and eggplant and remove the seeds. Arrange them in alternating strips on the puff pastry. Top with anchovies. Sprinkle with salt, pepper, granulated garlic, and drizzle with olive oil.
