Cooking Instructions

In a baking tray add the washed Beetroot, add salt and little olive oil and bake for 5 mins, add to blender after peeling skin, make a purée
- 2
Add whisked yogurt, goat cheese, honey and lime juice and whisk well - add to two serving glasses and refrigerate for 30 mins
- 3
Garnish with chopped walnuts and mint leaves and enjoy a healthy mousse
