Tonight I'm sharing a new summer dish from my garden. These eggplant skewers are quick and easy to make, and everyone loves them!
Steps

Use fresh eggplants from your garden, if available.

Use fresh basil from your garden, if available.

First, peel the eggplants, slice them, and grill the slices on a grill pan.

Repeat with all the eggplants and set the slices aside.

Take two plates: pour olive oil into one and homemade breadcrumbs into the other. Dip each eggplant slice first in olive oil, then in breadcrumbs.

Place a little cooked ham, provolone cheese, and a basil leaf on each eggplant slice.

Roll up each slice and thread onto a skewer. Place the skewers in the air fryer on parchment paper at 350°F (180°C) for 10 minutes.

The skewers are ready to serve and are easy to prepare.
