Ingredients

4 servings
  • 1.5lb, cubed Potato
  • 2medium (about 12 ounces), cubed Zucchini
  • 1lb, cut into cubes Salmon fillet
  • 4 tablespoonsOlive oil
  • 1 teaspoonSalt
  • 1/2 teaspoonBlack pepper
  • 1 teaspoonDried rosemary
  • 1 teaspoonDried thyme
  • 1/2 cupMayonnaise
  • 1/4 cupSweet chili sauce
  • 1 tablespoonRice vinegar
  • to taste Sriracha

Steps

  1. 1

    Preheat oven to 400°F. Toss potatoes with 2 tbsp olive oil, salt, pepper, rosemary, and thyme. Roast for 25 minutes.

    Add zucchini to potatoes, toss, and roast together for 15 minutes more.

  3. 3

    Toss salmon cubes with 2 tbsp olive oil, salt, and pepper. Pan fry until golden and cooked through.

  4. 4

    Mix mayonnaise, sweet chili sauce, rice vinegar, and sriracha to make the sauce.

  5. 5

    Layer roasted potatoes and zucchini in bowls, top with salmon, and drizzle with sweet & spicy mayo.

Tips

For extra flavor, consider adding fresh herbs or a squeeze of lemon juice before serving.
