Wash tuvar dal nicely and pressure cook it with 4-5 whistles. Blend it and keep aside. In a pan heat oil and add jeera, coriander seeds, Fenugreek seeds, fennel seeds, black pepper, chana dal and saute for couple of minutes.

Also add sliced onion, garlic, green chilli, ginger, fresh coconut, curry leaves and dry red chilli and saute for few minutes or till aroma releases. See that any spices doesn't get burnt. After it cools grind it to fine paste. Heat oil add mustard seeds, let it splutter, add curry leaves, asafoetida and add shallots and saute.

Also add all the veggies, add turmeric powder, red chilli powder and salt, saute it and let the veggies soften. Add little water if needed. After veggies are soft, add tuvar dal to it.

Add the grind masala paste and tamarind paste as needed to the dal and let it boil for 8 - 10 mins. Garnish with coriander leaves. Serve hot and enjoy Kerala Sambar.
