Palya is a popular dry dish from the Indian State of Karnataka often made by stir frying or sauteeing Vegetables with good flavourful ingredients. It is similar to Tamil dish Poriyal and Thoran of Kerala. An absolutely stunning twist to this beautiful dish called Palya with the use of Mustard Greens by me. I wanted to incorporate these healthy Greens in a simple dish and since it's in Season now, I thought of doing it for Breakfast. It turned out to be so very flavourful and aromatic as well as extremely delicious. It was loved by all. Do give it a try in this different and a unique look. You would love it for sure.
It is most commonly made with a single Vegetable like Beans, Cabbage, Carrots, Pumpkin, Green Beans, Potatoes etc. The addition of grated fresh Coconut gives it a sweet, nutty flavour and aroma. Addition of healthy Vegetables is a plus point in this super delicious dish.

Steps

Heat oil in a pan preferably coconut oil. Add mustard seeds and let them splutter. Also add bengal gram and black gram both.

Add curry leaves, dry red chillies and green chillies. Saute for a few seconds.

Add chopped onion and finely chopped mustard greens now along with turmeric powder and salt. Mix well.

Cover and cook on a low heat until done stirring occasionally. The water should dry up well. Leafy vegetables do leave a lot of water while cooking. So please let it dry up well and roast it to perfection on a medium high to high heat.

Finish by adding freshly grated jaggery and coconut. Mix and cook for 1 more minute. Garnish with chopped coriander leaves. Serve hot alongside steamed Rice and Rotis both. Enjoy!
