Sweet Peanut Butter Winter Squash Stew

Squash is my favourite food in the world and with the naturally sweet cooked winter squashes, it's great to make some nice baked desserts with peanut butter. That said, the combination is also delicious for a slightly sweeter tasting whole meal.

Squash is my favourite food in the world and with the naturally sweet cooked winter squashes, it's great to make some nice baked desserts with peanut butter. That said, the combination is also delicious for a slightly sweeter tasting whole meal.

Slice the squash in half and save the seeds for roasting (can roast them now to sprinkle on top of the final dish for a nutty crunch!)

Slice into about 3cm cubes to later mash (or size of your choice if you prefer to eat whole chunks) and toss with a sprinkle of salt and any seasonings/flavourings. You can also add minced tofu here for a full balanced meal that adds creaminess to the end dish.

Microwave covered for 5 minutes, then microwave again in intervals of 2 or 3 minutes a couple more times until soft and mashable. If you enjoy the roasted flavour, you can also toss with oil and roast in the oven at this stage for a longer prep time.

Mash the squash up with a spoonful of peanut butter and enough milk to reach desired consistency (mash, stew, or even soupy)

Garnish with salted roasted seeds, roasted edamame/chickpeas, oats, or granola!
Tips
For squash types, a whole delicata or a half celebration squash are my preferred soft sweet fleshed ones for this meal. A good chunk of buttercup or butternut could also work! I've tried it with acorn squash and it was good, but didn't have the same natural smooth sweetness.
