Ingredients

  • 1 1/2 poundschicken breast
  • 1/2 teaspoonminced garlic
  • 1/2-3/4 cupschicken stock
  • 10 ouncecan tomatoes with green chilies (drained)
  • 2-3 ouncescream cheese
  • 1 cuppepperjack cheese (shredded)
  • 1 cupmonterey jack cheese (shredded)
  • (OPTIONAL) 2 ounce sliced black olives
  • (OPTIONAL) 2 ounce jalepeno slices

Steps

  1. 1

    Add chicken breast, chicken stock, and garlic to skillet

  2. 2

    Cook over medium heat until tender.

  3. 3

    Shred chicken into casserole dish, draining any remaining stock.

  4. 4

    Mix in the drained can of tomatoes with green chilies.

  5. 5

    (OPTIONAL) Mix in jalepenos and black olives to the dish.

  6. 6

    Add clumps of cream cheese throughout the dish.

  7. 7

    Add a layer of shredded pepperjack cheese.

  8. 8

    Add a layer of monterey jack cheese.

  9. 9

    Cook in 350 degree oven for 35 minutes.
