Place the tahini in a large bowl. Gradually add water while stirring until the mixture becomes smooth and creamy—not too thick or too runny. At first, the tahini will thicken when you add water, so keep adding water and stirring until you reach the right consistency.

Add the lemon juice and salt, and mix well. If you like, you can also add chopped parsley.

Always thin the tahini with water first, then add the lemon juice. Enjoy!
