Cook the noodles according to package instructions and set aside. Bring water to a boil, add yellow curry powder, and stir to combine. Add coconut milk and a little water (to prevent the coconut milk from becoming too thick). Add chicken, shallots, and sweet potato.

Simmer until the sweet potato is cooked through. Season with seasoning powder, sugar, and fish sauce. Add bean sprouts.

Pour the prepared yellow curry over the cooked noodles. Top with boiled eggs, garnish with cilantro and fried shallots.
