Ingredients

1 hour 20 mins
8 servings
  1. 1 cupvital wheat gluten
  2. 1 tsponion powder
  3. 1 tspgarlic powder
  4. 2 tbspsoy sauce or see my profile (vic20adamant) for soy-free soy sauce
  5. 1620 mlstrong vegetable broth

Cooking Instructions

1 hour 20 mins
  1. 1

In a bowl add the vital flour, onion and garlic powders

  2. 2

In another bowl add the soy sauce to 180mls of the stock

  3. 3

Slowly add this to the flour mixing with your hands until the flour is combined. You should have a big rubbery ball of dough and you might need more or less stock

  4. 4

Knead the dough a bit to make it smooth, let it rest a few minutes, then knead again

  5. 5

Divide the dough into the shape you need for your recipe. Inch cube pieces are good for casseroles, shape into patties for burgers, oblongs for mock steaks or chicken breasts etc

  6. 6

Slowly simmer in the rest of the stock in a large pot for an hour on a low heat. Seitan expands when it cooks so you need a large pot

  7. 7

This recipe is for basic seitan, it won't taste nice eaten like this. Use it in any recipe that calls for seitan. It will take on any flavour, you can have it curried, sweet n sour, bbq.

  8. 8

Check my profile for more ideas on how to use it

  9. 9

For chickeny flavoured seitan add a half tsp of sage and a quarter tsp of thyme in the 1st step
