Ingredients

  1. Base Layer
  2. 225 gramscookies made into crumbs - digestives, graham crackers etc
  3. 4 tbspsunflower spread / butter, melted
  4. 3 tbspgranulated sugar
  5. 60 gramschocolate chips - I use Moo-Free brand, Enjoy Life brand or Eat Allergy Safe brand
  6. Cookie Layer
  7. 120 gramsgluten-free / plain flour
  8. 50 gramsgranulated sugar
  9. 1 tspbaking powder
  10. 160 mlcoconut milk
  11. 2 tbspolive oil
  12. 2 tspvanilla extract
  13. 60 gramschocolate chips
  14. 25 gramsdesiccated / shredded coconut (optional)
  15. 30 gramsfinely chopped walnuts (optional)

Cooking Instructions

    Preheat the oven to gas 4 / 180C / 350°F and grease a 6"x 8" ovenproof dish

  2. 2

    Combine the cookie crumbs, butter and sugar for the base layer together and press into the bottom of the greased dish. I have a lot of gluten-free cookie recipes you can use if you need to, just have a search through my profile

    Sprinkle the chocolate chips on top and bake for 5 minutes until the chocolate has melted, then spread it over the top of the base with the back of a spoon

    Whisk together the flour, sugar and baking powder then beat in the milk, oil and vanilla until smooth

    Fold in the coconut, chopped walnuts and chocolate chips

  6. 6

    Pour the batter over the base and return to the oven to bake for 35 - 40 minutes or until a toothpick tests clean
