Ingredients

  • Base Layer
  • 225 gramscookies made into crumbs - digestives, graham crackers etc
  • 4 tbspsunflower spread / butter, melted
  • 3 tbspgranulated sugar
  • 60 gramschocolate chips - I use Moo-Free brand, Enjoy Life brand or Eat Allergy Safe brand
  • Cookie Layer
  • 120 gramsgluten-free / plain flour
  • 50 gramsgranulated sugar
  • 1 tspbaking powder
  • 160 mlcoconut milk
  • 2 tbspolive oil
  • 2 tspvanilla extract
  • 60 gramschocolate chips
  • 25 gramsdesiccated / shredded coconut (optional)
  • 30 gramsfinely chopped walnuts (optional)

    Preheat the oven to gas 4 / 180C / 350°F and grease a 6"x 8" ovenproof dish

  2. 2

    Combine the cookie crumbs, butter and sugar for the base layer together and press into the bottom of the greased dish. I have a lot of gluten-free cookie recipes you can use if you need to, just have a search through my profile

    Sprinkle the chocolate chips on top and bake for 5 minutes until the chocolate has melted, then spread it over the top of the base with the back of a spoon

    Whisk together the flour, sugar and baking powder then beat in the milk, oil and vanilla until smooth

    Fold in the coconut, chopped walnuts and chocolate chips

    Pour the batter over the base and return to the oven to bake for 35 - 40 minutes or until a toothpick tests clean

    Serve straight out of the oven with ice cream, chocolate sauce and caramel sauce
