  1. 5 lbred potatoes; quartered
  2. 3/4 ozrosemary; minced
  3. 1 tbspthyme; minced
  4. 1/2 cupmayonnaise
  5. 1/2 cupdijon mustard
  6. 1/4 cupwhite vinegar
  7. 1 1/2 tbsponion powder
  8. 1 tbspgarlic powder
  9. 1 tbsppaprika
  10. 1roasted red bell pepper; julienne
  11. 1roasted yellow bell pepper; julienne
  12. 1roasted orange bell pepper; julienne
  13. 3jalapenos; thin half moons
  14. 3handfuls baby spinach
  15. 1vegetable oil; to cover
  16. 1salt and pepper

  1. 1

    Toss potatoes with enough vegetable oil to cover. Season with half of the dried herbs and spices, salt, and pepper.

  2. 2

    Roast at 400° approximately 40-45 minutes or until potatoes are caramelized and fork tender.

  3. 3

    Combine mayo, mustard, vinegar, and the remaining spices. Whisk to incorporate.

  4. 4

    Combine roasted potatoes, roasted peppers, jalapenos, and spinach in a large mixing bowl. Toss. Add dressing. Toss.
