I love this healthy version of a cozy favorite because it allows you to be flexible with your favorite, seasonal veggies. I do confess though that it's not too healthy because I always end up eating most of it the first night!

I love this healthy version of a cozy favorite because it allows you to be flexible with your favorite, seasonal veggies. I do confess though that it's not too healthy because I always end up eating most of it the first night!
Cooking Instructions

Saute onions and garlic over high heat until slightly tender
- 2
Add veggies and saute until tender. Set aside.

Whisk egg in ricotta and stir in greens
- 4
Put a little sauce in a 9 x 13 inch pan
- 5
Top with four noodles.
- 6
Top with half the ricotta mixture, then half the veggies and 1 cup of sauce

Top with noodles and repeat the layers.

Finish with a third layer of noodles, the remaining sauce and the mozzarella.

Cover and bake at 375° for 40 minutes. Remove foil and bake for 20 minutes more or until cheese is bubbly.
