Roasted Fingerling Potatoes

Ingredients

  1. 1 1/2 lbfingerland potatoes
  2. 4 tbspolive oil
  3. 8garlic cloves - peeled and halved
  4. 1 tbspdried parsley
  5. 1/2teasppon salt
  6. 1 pinchof pepper
  7. 1salt and pepper to taste

Cooking Instructions

    Set up aluminum foil to make a "foil packet" for grilling. (Alternatively this can be made in a covered baking dish in the oven.) Grease top and bottom of foil with about 1 teaspoon of olive oil each (You could use cooking spray if you preffered)

    Combine remaining ingredients - make sure potatoes are evenly coated with olive oil. I do this right on the foil to save myself a dirty dish.

    Seal up packet. Grill over indirect medium heat for 40 - 50 minutes or until tender. If using oven - bake covered at 400° for 40-50 mins or until tender.

    To serve - drizzle any oil left in foil packet over potatoes and salt and pepper to taste. Enjoy : )
